Hyderabadi cuisine is a mix of traditional royal food and the spicy, hot Andhra cuisine. Any discussion on
Hyderabad would be incomplete without talking about the Hyderabadi Biryani. A reminder of the Nizam days, this
specialty dish of Hyderabad uses long grained rice, layered with meat and spices. The edge of the vessel is
sealed to keep the aroma intact. Biryani is traditionally served with Mirch ka Salan, a dish made with green
chillies, tamarind extract and spices. Another vegetarian favorite is Bagara Baingan or spicy brinjal/eggplant
curry. Kebabs or minced and cooked meat is another non-vegetarian specialty. Do not forget to sample the malai
puri at the Almond House in Hyderguda.
During the month of Ramzaan, a special dish called Haleem is prepared. This uses pounded meat mixed with wheat.
The deserts are as royal as the entrees. Qubani-ka-meetha is made with dried apricots and Double-ka-meetha is a rich milk and bread pudding.
